After a long hiatus, maybe it’s time to write again?

It’s never easy being a working mum

No matter how old or young our children are, you still care for them in many ways

When they are no longer a helpless baby or the innocent toddler, but an active elementary-school going kid…

You send them to school, tuition, classes, cook meals for them, buy food for them, make sure you earn enough to put food on the table and you do all these while juggling your full time work

When they are teens, concerns and worry change and can range from whether they are in good or bad company, are they catching up for their school work, are they emotionally alright as they ride through the hormone charged puberty phase. While you continue to bring the bacon home and juggle all you can together with your spouse

If you are fortunate like me to have a very involved spouse, we are blessed so try to remember to appreciate the little things your spouse have done

If your spouse is not as involved, know that you are already doing what you can with all you have!

Your child(ren) has food to eat, they are clothed and goes to school.

Yes. And when you have time and space, spend some time on yourself to take a break and some on family time with you child(ren)

Remember when you were a kid?

Wasn’t the meals together, be it at home or outside, being the most happy times?

How about the window shopping, strolls, tv-watching together?

We all don’t need expensive meals or luxurious spendings but time and effort

1 ingredient baked salmon cubes (approximately 3cm)

Super easy side done in 20 minutes using pre-cut salmom cubes! I buy from Sasha’s Fine Foods 🙂

Preheat the oven (200°C) for 5 minutes

I use a Bosch oven and for this dish, I place the wire rack at level 3 (middle), use top heating and option 2 for grill.

Get a foil, place salmon cubes on foil,

When oven is heated, place the foil of salmon cubes on the wire rack

Bake 10 minutes

Flip the cubes

Bake for another 5 minutes

Done! No salt or anything for this healthy dish!! The fatty oil in the fish means no additional oil needed for baking!

I’ve been buying from Sasha’s Fine Foods and I have to say, their Mt Cook Alpine New Zealand Salmon taste really different from the usual salmon that you get from other grocers!

Fresh and tastes great when steamed on its own. No need for salt or any seasoning!

I buy individual portions of the frozen version (there’a also fresh option).

Super easy to cook:

Fill up the steamer basket with water and then fire up the stove.

Wear your gloves, get ready a heatproof plate (you can wrap your plate with aluminium foil for easy cleaning later) and place a piece of paper towel right beside the plate.

Then, open the bag of salmon (so easy to peel open the bag, as there’s a “peel off here” at the corner!), pat the salmon portion dry with the paper towel and then place the salmon on the plate!

Steam the Mt Cook Salmon portion for 15 minutes! No need for any seasoning at all as the freshness and sweetness of the fish makes this dish so delish you can enjoy it on his own, healthily 🙂
